Certified Wife Cooked: Beef Kaldereta

I’m sorry for not updating my site because last week is one of the toughest days in our family, as my grandmother passed away.  But I promise to write as many articles as I can next week.

I prepared our meal last Wednesday since Hubby and I was on leave that time, I opted to prepare our lunch with this popular dish in the Philippines especially in Luzon which served during special occasions.

You can select what kind of meat you want to use on this recipe, either pork, beef or goat meat.  But since I don’t eat goat meat, I will be using beef instead. You may need to utilize a pressure cooker to reduce the preparation time as the beef meat softens longer time. As special at it may seem, preparing something like this takes some time and patience but it is all worth the wait. So I suggest using pressure cooker.

Ingredients:
  •       1 kilo beef, cubed
  •       3 garlic cloves, crushed and chopped
  •       1 onion, finely chopped
  •       4 cups water
  •       1 cup red bell pepper, cut into strips
  •       1 cup tomato sauce
  •        ½ cup liver spread 
  •       1 tsp. crushed chili
  •       3 large bay leaves
  •       2 cups potatoes, sliced
  •       2 cups carrots, sliced
  •       1 cup cooking oil
  •       salt and pepper to taste


Procedures:

1.        Put the beef in pressure cooker and let it boil for 15 minutes. Set aside.
2.        Heat the cooking oil in the pan and fry the carrots and potatoes until color turns light brown.


3.        Remove the fried carrots and potatoes from the pan and set aside.
4.        In the same pan where the vegetables were fried, sauté the garlic and onions.


5.        Add the beef and simmer for 5 minutes.


6.        Add water and let the beef boil until tender for about 15 minutes. (if using pressure cooker or 1 to 
           2 hours if using an ordinary pot)

7.        Add the tomato sauce and liver spread and simmer for 10 minutes.


8.        Add carrots, bay leaves, bell pepper, crushed chili, and potatoes and simmer for 8 minutes.
9.        Add salt and pepper to taste.


10.     Serve Hot. Enjoy!

And this is my version of yummy Beef Kaldereta! Enjoy it with few cups of steamed rice.
